Why did 3th and 10th jurors stay,and what made them change their vote?

Juror 3 and 10 are both bigots; they decided he was guilty in the beginning based on race and where the man was raised.

In the end, the only reason they changed their vote was that they wanted out of the jury room..... it was that simple. There was immense pressure and tension while they deliberatede, made even worse by the fact that these men didn't have a concrete reason for voting guilty.
