why does Paul and the others consider guarding the village a good job

Basically because they are not actively engaged in battle. They make the most of the village's possessions, decorating and stocking with food the concrete cellar in which they shelter. They make the place as cozy as possible. They sit under starry nights and they even have a pork feast. The job is relaxing and gives them a chance to unwind.
