Spitz is the original dominant leader of the pack, and Buck learns that in the wild it is kill or be killed. Thus in order to beat Spitz, he needs to be clever and sneaky. In terms of fighting ability, Spitz is superior, but Buck is able to trick Spitz and ultimately beat him.
I believe they leave Dawson because they used the money they received for delivering the logs to "grub stake" some mining plots - meaning they would get a share of the profits if any gold were found. Thus they are going to check out the mining operations and see if there is any gold.
