Explain the line, "Gather ye rosebuds while ye may." How does this theme surface in the movie ?

Mr. Keating brings his class to view some old black and white photos. He recites a poem by Robert Herrick called To the Virgins, to Make Much of Time. The line basically implores the reader to take chances and risks while they are young and able because old age and death come upon quickly.
