Bella:"Have you imprinted on someone" Jacob:"you'd know if i had." What does that mean??

Okay, I'm a little reluctant to say that I know this but I teach High School. Imprinting on someone is kind of like vampire love. The person becomes your other half and the ground shakes and the universe does cartwheels or something. The girl becomes everything for the guy; he will do anything for her. I think it works the other way around as well. So, Jacob says that if he imprinted Bella, she would know.
