What does abuelita mean when she says “we are lime the Phoenix”?

The phoenix is a symbol of hope and rebirth. It is born out of flames and ashes and rather appropriate that we encounter this symbol right after Esperanza's house burns to the ground. Like the phoenix, Esperanza and her family are literally survive and begin again after the flames.
