Vincent is referring to the fact that his cells tell the truth about who he is - you can't lie about your cells. His cellls, genetics, make him invalid. The above quote takes place when Vincent realized that the application process, as well as the interview he had for the job at Gattaca required nothing more than a DNA analysis..... thus, he had to concede that his father had been right.... the only thing that mattered was genetics.
