after the soldiers get to the marsh to find the convicts how can you tell that both pip and joe feel pity for the convicts.

I think that you are referring to Ch. 5. Pip and Joe see that they are cold and hungry. They have been fighting and looked pretty pathetic. Pip's convict (the one he fed earlier) claims that he stole his food from Mrs. Joe's pork pie thus getting Pip off the hook for aiding him. Pip feels remorse for the man taking the blame.
