I think Dickens uses letters as a vehicle to convey information about both plot and thoughts of a character. Letters serve as a plot device to tell us about information that sheds light on a character's motivations and inner thought precess (kind of like a Shakespearean soliloquy) as well as a device to move the plot forward.
