Does the dragon like vegetables?

I don't think the dragon is commenting on his like or dislike of vegetables more than the nature of reality. He was merely pointing out that a vegetable maintain the same molecular structure when it is cut into pieces while animals, like humans, need the head for the organism to remain intact.
