What is the purpose of the sheet for the wedding night? Why does Tita see ghosts after looking at it?

The sheet was used to prove the bride's virginity..... always checked the morning after. Tita saw what is described as a "ghost" as she came to a final understanding that she had no hope of becoming Pedro's wife.
