Explain (as best as you can) what you think is happening with/to Simon at the end of the chapter 8?

Simon is having his conversation with "the Lord of the Flies". The pig's head on the stick is essentially a personification of the evil that is on the island. Simon is Golding's Christ figure. He is facing his "last temptation". Even a Christ figure must face his dark side. It tells Simon not to save the boys because they don't want to be saved. It prophesies the end of Simon. Still, Simon overcomes the voices in his head and full fills his date with destiny.
