Earlier in the play, Benedick called Beatrice “Lady Tongue.” What did he mean? What does Beatrice mean when she charges that the men of Messina have “turned into tongue and trim ones too?”

I think Beatrice is alluding to the fact that men too have learned to say things in a fancy way that really amount to lies. "Lady Tongue" refers to the fact that Beatrice has a lot to say for a woman. She really doesn't know her place or when to shut up.
