why is this choice so important to them?

They choose to stay together and evacuate. Had they stayed they would have been liberated by the Soviets, and maybe Elie's father would have survived. I don't think you can second guess a decision like this. They chose to finish together regardless of the outcome. They chose love and family above all else; that could never be a wrong decision.
