Curley's wife is in a lot of emotional pain. She insults Candy because she is asked to leave. Candy, Lennie, and Crooks are among the most vulnerable characters in the story but Curley's wife is perhaps the worst off: she is merely a possession (hence her name). She lashes out at Candy to make herself feel better.
