Why can't the girls inherit Lougbourn?

British law and custom dictates that family estates like Longbourn can only be inherited by male heirs. The Bennets have nothing but daughters, meaning that a male relative... possibly a distant relative, will inherit the estate when Mr. Bennet dies.
