"Stoops to conquer" relates to Kate’s ruse of pretending to be a common barmaid in order to win the affections of Marlow. Marlow apparently is not comfortable around girls of high social status. In order to woo Marlow Kate, of high social status, pretends to be a low class bar maid. This seems to do the trick and Marlow falls in love with her. Thus, Kate stoops below her social class to conquer (win over) her man.
