Why does the narrator shift back and forth between the middle of the hunting scenes and the conversations between Gawain and the lady of the house?

There is a hunting theme to both these scenes. Just as the animals are being tested, so is Gawain. The Knight's wife is a hunter of sorts, looking for weakness in Gowan's moral character.
