How did Paul learn that Joey was prejudiced?

In chapter two Joey comments that Tangerine is full of immigrants. He says some pretty racist hurtful things and Paul is surprised,

"This place is like darkest Africa. Like the Amazon jungle. Like we're learning to live among the natives here"
