What does Paul come to understand when Luis describes what is best about  the Tangerine Business? 

I think Paul understands the beauty and honesty of the tangerine business. The smell and taste of the fruit is part of it but taking care of the orchards is experiencing nature. It holds none of the dark pretenses of his personal life that feel contrived and insincere.
