Why does Rudy change from an apple thief to a bread giver?

"After Rudy steals and eats tons of apples, Death remarks "in years to come, he would be a giver of bread – not a stealer." Rudy becomes more like Hans. He begins to feel the pain of others and is no longer interested in satisfying his own desires. Later in the book Rudy leaves bread to give to the Jewish prisoners marching to Dachau."
