Why does Rudy tempt fate by offering the Jews bread as they are marched through town to Dachau? Why include Liesel?

Rudy knows full well that he could be killed for helping Jews. Rudy, however, is both empathetic and a bit of a rebel. Liesel too is empathetic and rebellious if circumstances demand it.
