I just can't seem to find anything ironic about a man going to his family's headstones, and thinking about eating taffy with his dead wife.

I'm with you, I fail to see the irony. Possibly, we can find irony in the fact that Eddie wishes for nothing more than being with his wife.... and before he turns eighty-three.... they will be together.
