In context, this remark comes directly after Jeannette makes a case for her mother leaving her father. Rose Mary won't hear of it, and her children are desperate for a sense of normalcy.... some kind of structure. Rose Mary then tells Jeannette that her religious faith makes separation impossible.... and also says that she "is an excitement addict". From this, we can infer that Rose Mary thrives on the unknown.... she likes the moving, the anticipation, and the upheaval her children wish to end. In essence, she likes her life.
