My Interpretation: Nick acts as a sort of buffer between Gatsby and Daisy. He is there to make sure things don't get out of hand, so as to keep things from getting too personal between Gatsby and Daisy.
Also, throughout the book conversation often isn't direct, it has a means by which it goes through, and in this instance that means may be Nick.
