The fact that Gatsby's motivations come purely from dreams and attaining the one woman he's dreamed of his entire adult life evokes a sympathy in the reader that we otherwise would not feel. Let's face it, he's trying to steal another man's wife and break up a family.... that's not something we are usually sympathetic about!
