Meyer Wolfsheim was the man who was said to have fixed the 1919 World Series. Gatsby and Wolfsheim seem to be very good friends. As Ian said, the emphasis on Wolfsheim's nose shows that Nick and/or Fitzgerald are somewhat steryotyping against Meyer.
