Gatsby's infatuation with Daisy is obsessive. He has put her on a pedestal as part of his unattainable dream. The more he can't have her, the more he wants her. I suspect, had he actually ended up with Daisy, his dream would have fallen apart. Daisy was not only human being; she was a very flawed human. I think that Gatsby was in love with the idea of Daisy rather than Daisy the person.
