Why were workers burning the fields? What impact does this have on the migration of microbes and the natural biodiversity of an area?

I am unable to find a reason for why the sugarcane fields were being burned. Further research has provided me with the information that the ash from the burning leaves something behind that helps the soil produce during the next planting season. I will need a chapter number to find any further information.
