Was there any quotation in the novel that proved Katniss knew how to fend off the animals like cougars, bears etc?

I don't know of any specific instance, but I will check for you. Katniss' knowledge of the woods comes from the hours she spent hunting there with her father. She is adept with a bow and arrow, thus, she would be able to protect herself. I will, however, check to see if there's any other mention in the text.
