What do you find most surprising in Upton Sinclair's account of the meatpacking industry around the turn of the century? Why?

This question is directed to what you think rather than surprised me. I think a general response might include the unhygienic handling of meat. You might also include the brutal killing practices and the inhumane treatment of animals and workers.
