But how does he complete this quest and what does he actually set out for?

Amir tries to escape from Hassan and Ali by getting rid of them remember? So by getting rid of them, he feels he can move on, but he never really does. He sets our for salvation by finding Sohrab, and he feels that he can find redemption by looking after him. Hope that answers your question!
