Why do Odyseus's men refrain at first from eating the cattle?

how does the citation change while they are on the island ?

The men swore an oath not to eat the cattle of the gods, which were sacred to Helios. The situation changes when they've been stranded for a month and have no food..... the men are starving and break their oath.
