Santiago's endurance is stressed throughout the entire novel. Just the fact that he gets back to the shore without any meat left on his catch shows that he has been out for a very long time. And he ends up being out longer than he is originally prepared for, another indication that this "battle" has gone on for much longer than he might have thought.
