Why does the thought of selling the fish meat disappoint the old man ?

Selling the fish meat disappoints the Old Man because it isn't about the selling... he saw fishing as a sport to be proud of. It wasn't simply a way to make money, it was something he loved.

You did not kill the fish only to keep alive and to sell for food, he thought. You killed him for pride and because you are a fisherman. You loved him when he was alive and you loved him after.
