I think returning home is Santiago's one last defiant gesture against the sharks. Together, he feels the Marlin and himself have destroyed many sharks. In honour of his brother the marlin and in defiance of the sharks Santiago spits into the ocean telling the sharks to eat his spit and dream they've killed a man.
