While both the doctor and the priest should be in healing professions (one for physical healing and one for spiritual healing), they are shown to be money-grubbing men who only perform their services when money is paid, regardless of the risk to the patient/parishioner. Both will only do their jobs when the patient/parishioner can pay. Therefore, the doctor will not treat the scorpion bite until Kino can pay; Kino and Juana cannot be married in the church until they can pay the priest for his services. In some ways, the priest is the worse of the two because his acts do not represent the mercy that should be at the center of a belief in the doctrines of the church in Kino and Juana's village.
