According to Scout, Calpurnia called the Hot Steam superstition that Jem and Dill describe “nigger-talk.” What does Calpurnia mean by saying this?

Calpurnia is alluding to the fact that the "hot-steam" superstition is foolishness. She doesn't want Scout talking that way...... thus, this is her way of reprimanding her.
