The structure is similar to the one in Figure 11-9. The formation of any ordered structure will decrease entropy. Water is a liquid and made of hydrogen bonds that always move due to thermal motion. If a water molecule is next to another hydrophobic water molecule, it is restricted in motion because it cannot form any hydrogen bonds in the direction of the hydrophobic molecule. If a molecule bonding to fewer partners, there is a more ordered water structure, thus a cagelike structure. This structure is similar to ice but less organized, and less extensive network.
