Corn contains an enzyme that is responsible for conversion free sugar molecules into starch. By adding the corn to boiling water you denature the acting enzyme, thus preventing the reaction from happening. Enzymes have a small temperature range in which they can function. Once the corn is frozen it is preserved in nearly the same biochemical status as the day it was picked.
