Blocking is the procces of creating different groups (blocks) in order to test a factor (explanatory variable). The researcher would like to test a factor using blocks because he/she believes the response variable may be affected by the blocks, that is, for each factor he/she will obtain different results per block.

For example, suppose a researcher would like to test the mean suggar consumption per age (factor). So, he divides the individuals in four groups: 18-30, 31-45, 46-60, 61 or older. But, he/she believes that gender may affect the response variable (the suggar consumption). So, two blocks are created: male and female.
