Fructose is a β-ketose sugar because it has a carbonyl group at the C-2 position, within the carbon chain. It is also a hexose on account of having six carbon atoms.

Sucrose is a disaccharide made up of two hexose molecules, glucose and fructose joined by α-β-1,2-glycosidic bonds. When it is hydrolyzed, constituent α glucose and ß fructose are released. The orientation of the hydroxyl group is fixed. It does not change during condensation or hydrolysis reactions.
