Starch is a polysaccharide made up of glucose monomers. The α-1,4-glycosidic bonds in starch have to be hydrolyzed by the amylase enzyme to release the glucose molecules. As high fructose corn syrup should contain fructose monosaccharides too, some of the glucose molecules are converted to fructose by the enzyme isomerase.
