Trypsin inhibitors are substances in raw (uncooked) soybeans which inhibit growth in growing animals and can cause enlargement (hypertrophy) of the pancreas. The ingestion of trypsin inhihibitors by monogastric animals (humans, rats), STI ( Soybean Trypsin Inhibitor) inhibit the proteolytic( protein digesting) enzyme trypsin produced by the pancreas. The pancreatic enzyme trypsin plays a key role in digesting protein in the human body. STI inhibit human trypsin which could inturn lead to a reduction in the bod's ability to utilize the soybeans most important amino acids,the first-limiting, sulphur containing amino acids methionine and cystine. Because of these reasons Tofu should be treated for trypsin inhibitors.
